A few months back, we had a bit of discussion as to whether or not cheese is vegetarian. Several people emailed me to thank me, since they learned so much from my post. So, I thought it might be similarly useful to discuss the same about eggs.

All about egg substitutes
I like cooking with a store-bought egg replacer such as Ener-G or Bob's Red Mill brand, but you can also use silken tofu, applesauce or flax meal, depending on the recipe you're using. Here's what you need to know about using egg substitutes:

    You don't need eggs to make...
    Personally, I prefer to cook without eggs for several reasons. You can keep egg substitute on hand, without having to run out for fresh eggs. Plus, a box of egg substitute costs about the same as a dozen eggs, but will last forever. Here's a few things you might not know you can make without eggs:
  • Quiche (pictured)
  • Cakes
  • French toast
  • Bread pudding
  • Pancakes, waffles and crepes
