Pesto-baked tofu cutlets
These tofu cutlets are dredged in soy milk, breaded with a pesto and breadcrumb mixture, then baked until crispy. If you're not worried about added fat, these tofu cutlets are also delicious pan-fried in a little bit of oil.

Coconut curried lentils
Inspired by more traditional Indian vegetarian curried lentils or dahl, this simple homemade lentil dish adds coconut milk for a deeply flavorful meal. You might find that a chopped sweet potato or perhaps some fresh tomatoes would add a bit more texture to liven up these lentils, if you'd like.

Avocado gazpacho soup
A refresing and healthy avocado soup recipe with just a touch of spice. Perfect for this warm weather!
